The playoffs are here, and getting creative in what to serve for your gathering can sometimes be a daunting task. We had the chance to talk to the team at Epicurean Group (The catering guru’s at Mile High Stadium) to find out what will be served in the luxury boxes today as the Broncos take on the Steelers. Here’s a few ideas and the recipes to use for your party:
Green Chili BLT by Epicurean Group
8 pieces – Sourdough Bread (toasted with crusts cut off)
16 Pieces – Tender Belly Habanero Bacon (we like the spice, but any quality thick cut bacon will work)
16 Slices – Roma Tomatoes
16 Leaves – Baby Spinach
1 Cup – Green Chili Black Pepper Aioli
16 Decorative Picks
Begin by toasting and removing the crust of the bread. Set your oven to 400 degrees and cook the bacon on a foil lined sheet tray until your desired doneness. Anywhere from 10 -15 minutes depending if you like it crispy.
Spread the aioli on the tops of 4 slices of bread. Place 4 pieces of bacon on each piece of the spread bread. Fold the bacon in half and line next to one another. Place 1 tomato slice and 1 spinach leaf on top of each piece of bacon. Top with the other piece of toast. Place 4 picks in each sandwich in a proportionally spaced row to secure the tops to the bottoms. Slice into 4 equal sized finger sandwiches.
Green Chili Black Pepper Aioli:
1 cup Mayo
1 TBS Minced Garlic
2 TSP Black Pepper
1 TSP Lemon Juice
1 TSP White Wine Vinegar
2 TBS Sugar to sweeten if to tart
Chopped Green Chilies
Place all ingredients in bowl and mix with a whisk until combined.
HOT ARTICHOKE DIP
1/2 cup Mayonnaise
1 cup Mozzarella, shredded
1 cup Parmesan, grated
10 ounce canned Artichoke Hearts, drained, roughly chopped
1 cup hatch Green Chili, roasted, peeled, roughly chopped
1 tsp Garlic Powder
Chopped Cilantro to Garnish
Heat oven to 350 degrees
In a medium sized bowl combine all ingredients except the cilantro and mix until evenly combined.
Once minced, pour dip into a small casserole dish.
Bake 20-25 minutes until the top is nice and bubbly.
Remove from over, garnish with cilantro and serve hot.
Serve with Pita Chips, Fresh Veggies, or Tortilla Chips.
